I have seen several but none of the Vegas shows.  My bottom line:  When you go to Vegas you MUST take in a Cirque show.  There are 7 or 8 permanent shows in Vegas.  From what I've heard, Mystere might be your best choice.  O (the water show), Ka, and Beatles Love (all Beatles music) are also good.  I guarantee you have never seen anything quite like Cirque.  Each show is a unique form of performance art.

One note of caution:  Book your tickets ASAP.  Many of these shows are sold out for months in advance.  Tickets will be pricey.

Sometime during the next few days I'll send you a PM with a few ideas.  It's been almost a decade since I last visited Sin City so I'm not sure how helpful I can be.  Remember, what happens in Vegas stays in Vegas.  Oh, I forgot, you're taking your husband along, aren't you?   Never mind. :)

P.S.  If you're driving between the Grand Canyon and Vegas, stop and take a look at the Hoover Dam.  I've never seen it but I've heard it's worth a visit.
