I make dozens of Christmas cookies every year. most of them the old reliables, but I always like to try out new ones, too! This cookie is delicious, made it for the first time last week. If you like chocolate covered cherries, you should try it out.

Cherry Chocolate Chip Christmas Cookies
1 cup butter, softened
1 tsp almond extract
1 cup powdered sugar
3 tbsp maraschino cherry juice
1/2 cup chopped maraschino cherries
1 cup semi-sweet chocolate chips

Preheat oven to 350 degrees, Cover cookie sheets with parchment paper.

In large bowl with mixer beat butter until smooth and creamy. Beat in almond extract and powdered sugar. Turn mixer to low and slowly add flour, mixing in until incorporated. Mix in maraschino cherry juice and cherries.Stir in chocolate chips.

Roll into 1 inch balls (I just used my cookie scoop and shaped them a bit) and place on parchment paper. Spray bottom of a glass with non stick cooking spray and flatten balls. You will need to spray glass several times.

Bake for 12-14 minutes. Allow to cool for 5 minutes before removing cookies to cookie cooling racks.

l also made a glaze with a little almond extract and drizzled it over the tops. So good! Give them a try!
